Grass-Fed Beef Lettuce Wraps with Broccoli

February 16, 2010

Here’s a creative way to use your broccoli, green onion, and red leaf lettuce from Saturday’s produce share.  Add some grass-fed ground beef from our store and you have a perfect meal!

Ingredients:

1 lb grass-fed beef from Urban Acres
Raw broccoli
Green onion
Sea salt
Cracked black pepper
Garlic powder

Heat 1 tbs of olive oil in a pan over medium-high heat.  Brown beef.  Add chopped green onion and chopped broccoli and mix together in the pan – keep cooking until the broccoli is heated but still crisp (don’t overcook it – this helps retain more of the nutrients).

Season with salt, pepper, and garlic powder.  Put meat/veggie mixture into a bowl and serve with washed and dried leaves of red leaf lettuce.  Put a scoop of the meat/veggie mixture into a leaf of lettuce, wrap it up, and take a big bite!

(sorry, no pictures of the actual wraps themselves because we ate them too quickly :))
