    I hate cucumbers!…. or so I thought…. 🙂 In an effort to use all of my share I found two recipes which have changed my mind about cucumbers.
    1. Broiled quarters of cucumbers with salt and garlic, drizzled in hone;
    2. Cucumber, tomato, red onion, and MINT salad.

    [ahem].. I love cucumbers!!

      HA! Jennifer, this is so great to hear and totally what UA is about! We’re so glad you were “forced” to keep trying cucumbers and now you love them 🙂 The mint salad sounds incredible. Gonna have to try broiled cucumbers too! Thanks for sharing and for being a part of UA!

    I am in week 2 of my half shares, and I’m in heaven. I wanted to go with a CSA so I could get myself experimenting with product I wouldn’t normally buy. This week I ended up with leeks, chard, cauliflower, and zucchini, which I’ve never tried. I blanched the chard and froze it for the upcoming week (I plan on sauteing it with a bit of garlic and butter), made zucchini bread and muffins, made a quiche with leeks and bacon (OMG!), and made roasted garlic mashed potatoes and cauliflower. I’m having tons of fun coming up with recipes and am improving my cooking skills and nutrition at the same time. Whoo hoo!
