Local celery with lots of greens

The local celery from Gundermann Acres in this weekend’s co-op style produce shares has lots of leafy tops attached – fun!  Don’t waste your celery tops! There is so much you can make with them.

You might find that local organic celery is thinner, more flavorful and fragrant than your typical grocery store celery.  Like many other bitter greens, the celery leaves sweeten with cooking.

    I always dehydrate them in the oven. Then mix equal parts dehydrated leaves with salt to make celery salt.

        I believe it’s usually made with celery seed but I have been making it this way for several years.
