What is “Gluten-Free”?

A gluten-free diet is one that excludes foods containing gluten, a protein found in wheat.  It’s also used as a food additive in the form of a flavoring, stabilizing or thickening agent, often as “dextrin.”

Why eat “Gluten-Free”?

Some people have celiac disease, a condition that damages the lining of the small intestine and prevents it from absorbing parts of food that are important for staying healthy. The damage is due to a reaction to eating gluten, so people with celiac disease must avoid gluten for their entire lives.  Other people aren’t diagnosed with celiac disease but are sensitive to gluten and feel better when not eating it.  Still others don’t even know they’re sensitive to gluten but just don’t feel that great most of the time.  These folks should definitely try eating gluten-free as well!

HOW TO BEGIN

If you’re up for the challenge, start preparing now.  Thankfully, one of our favorite sites, Gluten-Free Goddess, has already done the work and prepared some super easy and comprehensive info on how to go gluten-free.  It includes everything from lists of what is and isn’t gluten-free, to dessert and snack ideas, even gluten-free cocktails and tons of recipes with beautiful photos.
