This Artichoke Scares Me!

We have a lot of folks wondering what to do with the artichoke from the produce share.  With a couple simple steps, you can enjoy this wonderfully healthy treat.  Here’s how…

1) Start off by cutting off the stem.

2) Cut off the top quarter of the artichoke.

Next, steam the artichoke in a steamer basket above about an inch of water in a pot for almost an hour until the leaves become super tender.  You’ll know it’s done when the leaves easily pull off.  Now it’s ready to serve!

Melt 3 tbs of butter in a saucepan.  If you’d like, you can add chopped garlic.  This will be your dipping sauce.

Peel a leaf off and dip in the butter sauce.  Then put the leaf in your mouth, and with your teeth, scrape out the white “meat” from the inside of the leaf.  You don’t eat the leaf itself, just the artichoke “meat” inside.  MMMM!

When you get to the end, you’ll see the fibrous “choke” in the middle, which you’ll want to scoop out and throw away.  You’ll know it’s the choke because it looks hairy and non-appetizing :).

Then the best part is left – the tender artichoke heart!  Dip in butter and enjoy!

    I have had good success with artichokes and a pressure cooker. Put it in the pressure cooker with 1/4 cup of water for seven to ten minutes and they are done.

    Please don’t toss the artichoke stem. It is as delicious as the artichoke heart. Just trim the tough outside layer as you would trim a broccoli stalk and cook along with the rest of the artichoke.
