Spicy Kale Salad

This is a wonderful and quick recipe to enjoy your kale that came in your produce bin.  Just like the chard that came a couple weeks ago, taking the bottom stem out will keep it from being really bitter.

1 bunch of Kale chopped
1/2 Cup shredded carrots
1/2 sliced onion
1 clove chopped garlic
Extra Virgin Olive Oil
Sea Salt
Cracked Black Pepper
Red Pepper Flakes

Heat up a pan to medium high and add the oil.  First add the garlic, carrots, and onions.  Do this for a couple of minutes and then add the kale.  Sprinkle the salt, pepper, and red pepper flakes.  It does n0t take long, just until it turns bright green.  You want the kale raw.  And thats it!  Enjoy.
