Grilled Sausage with Chard and Onions

January 30, 2009

When the weather is freezing, nothing is better than a great hearty meal.  You’ll need to fire up the grill and chardget a sautée pan to make this recipe.  We had a lot of people asking us what to do with the Green Chard that came in our produce bin.  Here is your answer!

Grilled Sausage with Chard and Onions

Sliced Grilled Italian Sausage (order here)
Sliced Green Chard
Sliced Yellow Onions
Extra Virgin Olive Oil & Butter
Seasoning:  Sea Salt, Cracked Black Pepper, & Red Pepper Flakes (if you want some heat)

Put sausage on the grill.  Meanwhile, slice up your onions and chard.  (Optional: Some folks cut the stalk out of the center of the chard because it can be bitter.)   In a pan on medium-high heat, add olive oil and butter and then toss in the onions.  Add salt & pepper.  While your onions soften, slice up your cooked sausage on the diagonal.  When the onions have softened, add sausage and chard to the pan with your onions.  Add salt, pepper, and red pepper flakes and toss.  Watch the chard – it will start to get bright green and soften a bit.  At that point, remove from heat and enjoy!
