Roasted Beet Dip

Here’s a great recipe for those beets!
Ingredients:
- 1 roasted beet (or more depending on the size of dip – recipe is for one beet)
- 3 tbsp walnuts
- 3 tbsp olive oil
- 3 tbsp balsamic vinegar
- 1/2 tsp salt
- 1 clove of garlic (or more to your taste)
1. Roast the beet at 400 degrees for 40 minutes or until fork tender. Remove from oven and let them cool.
2. Remove the skins from the beet(s), chop and add to all the ingredients in a mixing bowl. Pour into a blender or food processor and pulse a few times until blended to your liking.
Serve with crackers, pita, carrots, celery, or whatever you would like.

Recipe sounds great! I love beets and am so excited to be getting them in my bin every two weeks. Just wanted to share a goofy little poem I wrote on my blog about them:
