Roasted Purple Potatoes & Turnips
Everyone wants to know what to do with purple potatoes! They’re definitely unique looking, but you can eat them just like any other potato. Here’s a great recipe to use your purple potatoes and turnips from your produce share…what makes this dish extra wonderful is using your turnips that were harvested just a few days ago! How about that for fresh?
Ingredients:
5 purple potatoes
5 turnips
Olive oil to coat
sea salt, cracked pepper, oregano, garlic powder, onion powder
1) Slice potatoes and turnips into bite-size pieces.
2) Place potatoes and turnips in a bowl and toss with the olive oil and seasoning until all pieces are coated.
3) Roast in a 425 degree oven for 20-30 minutes. Toss halfway through cooking. Enjoy!




















We used the purple potatoes with the cage-free eggs and pork sausage and onion to make breakfast burritos. Quick easy, and with the CM southwestern tortillas delicious!

I just made this! I added one of the onions that came in my bin, I tossed it in about 5 minutes before it was done. This is my first bin and I am so excited about trying new vegetables!
